Farmers are busy during fall harvest. In the Midwest alone, there are “127 million acres of agricultural land”, meaning a lot of variety and crops that provide Americans with the nutrition, fibers, and supplies that keep us going (climatehubs.usda.gov). There are a variety of fruits, vegetables, and grains that are ready to go when the sun sets earlier. Below is a list of just some of the crops that keep farmers busy during the fall months.
- Corn: One of our favorites! After corn ripens, it is harvested in the autumn with grain combines.
- Soybeans: Another favorite. The leaves on soybeans begin to yellow in September and are ready to harvest shortly after.
- Apple: Apples are ready for picking (and delicious pies) during Indian Summer and the fall months.
- Pumpkins: One of the foremost icons of the season, this round, orange squash is harvest ready in the fall.
- Sweet Potatoes: What great timing for yams to be in season! There are plenty of savory, warm dishes to prepare with them.
- Potatoes: Many varieties of potatoes are harvested during autumn months.
- Cauliflower: This vegetable is growing in popularity as a carb replacement. It is a cool weather veggie and typically harvested in the fall.
- Celery: Perfect for your cold weather stew, celery is at its best in the fall.
- Cranberries: This New England native is ripe just in time for Thanksgiving.
- Eggplant: Eggplant parmesan, anyone? This rich, purple fruit is ready in the autumn.
